About Chilaquiles

Chilaquiles is one of the favorite or maybe the most favorite breakfast-brunch dish for Mexicans, at home is made mostly on the weekends. The most traditional recipe is made with sun-dried tortillas, torn in to pieces and lightly fried in cooking oil or lard, topped with a cooked and spicy tomato sauce with epazote, chopped onions, melted or crumbling cheese and sour cream. Many variations of the traditional recipe can be done with a fried egg on top of the Chilaquiles, pulled chicken meat, chopped steak or a whole steak can be added as well, The tomato sauce can be substituted for tomatillo sauce instead, the traditional hot green or Serrano pepper can be change for Chipotle, jalapeno, morita, guajillo, ancho etc. Chilaquiles with mole sauce are also available in some restaurants.
